Ingredients

Peachberry crumble

  • 500 grams Spelt Flour (white or whole)
  • 10 grams baking powder GF
  • 125 grams raw sugar
  • 100 grams coconut oil/butter
  • 2 eggs, size 6
  • 3 large, fresh peaches, or 400gm tinned if fresh not available
  • 125 grams frozen boysenberries, or other berries
  • 15 grams icing sugar, to decorate
  • 1 bottle cream or yoghurt, to serve

Recipe's preparation

  2. Preheat the oven to 180oC


    Method:


     



    • Place the flour, baking powder, sugar & butter in a Thermomix or food processor if you don't have one yet

    • Process until the mixture is like breadcrumbs, 3-5 seconds, speed 4

    • Add eggs & turbo / pulse to combine

    • Press 2/3rds of the dough into a greased 23.25cm springform cake tin or oven proof dish, lined with baking paper

    • Spread the peaches & berries over the dough & crumble the rest of the mixture loosely over the top.

    • Bake 35-40 mins until golden brown on top & the centre is firm

    • Dust with icing sugar & cut into wedges. Serve with cream, ice cream or yoghurt

Tip

You can make this into muffin sized portions, or use other fruits

    The flavour was good but I seemed to have a lot of crumble.  There seemed to be way too much flour & my thermo would mix in with the coconut butter & coconut oil (I used half coconut butter & half coconut oil) , I had to use extra eggs & extra coconut oil & still the dough was way too dry.

    i also found there was just not enough fruit.

    Wow!! Awesome crumble. I would add more peaches, could even double it. thanks for sharing as this is one of the best summer crumble recipes
