Ingredients
Pear and Ginger Sorbet
- 100 g raw sugar
- 350 g ripe Beurre Bosc pears, must be well ripened but not too soft
- 1 inch fresh ginger, peeled
- 1 strip lemon zest, about 10-12 cm
- 700 g ice
- 1 egg white

Remove stalks and core from pears.
Mill sugar for 10 sec, speed 9 until powdered.
Add pears, ginger and lemon zest and 350g ice.
Process for 20 sec, speed 9.
Add egg white and remaining ice.
Process 1 min, speed 9, with aid of spatula.
Serve immediately.
