Ingredients
Biscuit Base
- 110 g raw sugar
- 320 g SR flour
- 125 g Butter
- 1 egg
Filling
- 180 g raw sugar
- 70 g plain flour, or alternatively 30g cornflour
- 2 eggs
- 420 g tin crushed pineapple, in natural juice
Topping
- whipped cream, refer to EDC page 16

Preheat to moderate oven. Grease slab tin (I use a large laminton tin). Mill sugar 2 sec / speed 9. Add butter, melt 60 sec / 50°C / speed 4. Add flour and egg and mix 5 sec / speed 5 or until combined.
Press biscuit base mixture firmly and evenly into slab tin. Cook until golden (approximately 10 minutes). Clean and dry bowl.
Add flour and sugar to bowl, mill 10 sec / speed 9. Scrape down sides, add eggs. Zero scales, holding TM basket above bowl, tip pineapple into TM basket and strain juice into bowl, set basket aside and add water to bowl to bring up to 500g. Cook 7min / 90°C / speed 4. Stir in pineapple 3 sec / "Counter-clockwise operation" / speed 5.
Pour onto biscuit base cool and then refrigerate until set. Top with whipped cream (refer EDC page 16)

I used fresh pineapple and crushed it myself but went to long and it came out as froth. I think if you wanted to use fresh pineapple maybe just in for 5 sec on sp 5. It has still come out as I assume it should but there are no pineapple bits stirred through as stated above due to my mistake. I will be making this again with fresh pineapple so more experimenting to come and I will adjust in my comments if needed.
Do you think I could use fresh pineapple in this?
