Ingredients
Tiramisu
- 5 egg yolks
- 4 egg whites
- 100 grams castor sugar
- 500 grams Mascarpone cheese
- 400 grams Espresso coffee
- 30 grams galliano
- 30 grams Tia Maria
- 30 grams brandy
- 100 grams dark chocolate
- 250 grams cream
- 2 packages i savioardi biscuits

Place the 100g of chocolate into mixing bowl (make sure it’s dry) and grate 10sec/speed 8. Set aside.
Place the coffee, galliano, tia maria, brandy into mixing bowl and mix 15sec/speed 4. Set Aside.
Put the egg whites (egg whites at room temperature) into the mixing bowl 3-4 mins/speed 3.5 (don’t go higher in speed than this). Set aside.
Place the egg yolks and sugar into the mixing bowl and blend for 2.5mins/speed 4.
Add the mascarpone into the mixing bowl with the egg yolks and sugar and blend for a further 20sec/speed 4.
Transfer to a bowl and fold in the egg white mixture.
Place a 24 x 4cm cake ring on a baking (silicone) paper lined flat tray (or use a spring form tin of similar size). Dip half the savoiardi into the coffee mixture, ensuring they do not become completely saturated, and arrange in a radial pattern inside the ring (or in the bottom of the tin). Cover with half the mascarpone mixture and sprinkle liberally with half the shaved chocolate.
Repeat layers with remaining savoiardi, mascarpone and chocolate. Cover and refrigerate overnight.
To serve, place a wedge or large spoonful of tiramisu in the centre of each plate, top with whipped cream.
