Ingredients

Biscuit base

  • 200 grams Wheat meal or Granita biscuits
  • 30 grams almond meal
  • 10 grams caster sugar
  • 100 grams melted butter

Key Lime Pie Filling

  • 4 eggs lightly beaten
  • 375 gram condensed milk
  • 130 grams cream
  • 4 Limes juiced and some finely grated rind

Recipe's preparation

    The biscuit base
  1. Preheat your oven to 170 degrees C. Line a 20cm springform cake tin with baking paper.

  2. Put the biscuits into the Thermomix and pulse until a fine grain. Add the

    almond meal, sugar and butter then mix for 10 secs on speed 4. Scrape

    down side of bowl and repeat until combined.

  3. Press into the bottom of the cake tin and 3 cm up the sides. Refrigerate 

  4. The Key Lime Filling
  5. Put eggs into Thermomix and mix for 2 secs on speed 4. Add milk and

    cream speed 4 for 5 secs. 

  6. Begin with adding juice of 2 limes mix speed 4 for 5 secs. Taste to see if

    lime is strong enough. Add extra lime juice and lime flesh until desired

    flavour is achieved.

  7. Pour into biscuit crust and bake for 20 - 40 mins or until set. Cool and

    serve topped with lime slices.

Tip

With the lime juice it can be a bit of guesswork. Only you can determine how strong you would like the flavour. If you prefer a milder flavour use no rind or less juice and flesh. 

Watch it in the oven it can brown easily. 

Can serve it on it's own, or with cream or extra lime slices on top

You can also use lemon instead of lime for a different flavour.

    Lovely Creamy Dessert

    I used 3 limes and flesh and the flavour was very subtle so if you require a more punchy taste I would suggest ramping up the limes/lemons.
    I even had enough crumbs and mixture to make my daughter a mini pie (as we were taking it to our friends' house for dessert).

    Good recipe, I used 170ml lime juice (4 limes). Found crumb to be too crumbly, so will add a little more butter next time. It was difficult to build up the biscuit crumb sides. Base nicely softened 24 hrs later which I much preferred. Will definitely make again.

    Delicious, added 7 limes which were given to me but would add a couple lemons next time to get that tangy flavour and reduce the limes. Have put in my favourites file. Thanks

    So easy and so awesome. Mine took just under 40 mins and a lot of lemons and limes to create a mixed but still tart flavour. Loved it thankyou for sharring!
