Zucchini-Blueberry Smoothie Bowl
- 50 grams blueberries, frozen
- 200 grams zucchini, frozen
- 2 tbsp cacao nibs, raw
- 2 tsp cacao powder, organic
- 1 tbsp cacao butter (or coconut butter)
- 1 tbsp chia seeds
- 1 tbsp nut or seed butter
- 2 tbsp coconut flakes
- 400mL can coconut milk, or other milk of choice
- to taste honey, or other sweetener of choice
- 50 grams fresh spinach leaves

- Place all ingredients in the mixing bowl.
- Blend smoothie 2 minutes/Sp9.
- Divide smoothie into 2 bowls.
- Garnish with additional cacao nibs, coconut flakes and berries. Sprinkle with crushed nuts of choice.

As much as I love Zucchini Slice, there is only so much you can eat! I like to chop the zucchini into bite-sized pieces and blanch them before popping them in the freezer. This takes a bit of effort but means that the zucchini keeps better for a longer period of time.
This recipe is so versatile, and I never seem to make exactly the same smoothie bowl twice. You can use so many different types of berries, nut butters, milks, greens and sweeteners.
I often add some spices, such as cinnamon, nutmeg, ginger or cardamom, and a dash of vanilla powder is also delicious. If I make it for breakfast I like to add some spirulina powder as it always helps me to 'get up and go', and if you have any other powders that you use regularly you could easily add them as well. On occasion, I also add a sachet of frozen acai berries which produces a beautiful colour, as well as being very good for you.
So experiment, have a play around and find what works best for you!

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
