Ingredients

cobbler

  • 150g SR flour
  • 30g raw sugar
  • 1/12tsp cinnamon
  • 50g Butter
  • 90ml buttermilk save a little to brush top cobbler, make with milk and squeeze lemon
  • 1/2tsp sea salt

filling

  • 3 pink lady apples peeled and sliced
  • 400g rhubard chopped
  • 110g Raw caster sugar
  • 40g honey
  • 2tbs cornflour
  • Juice of one lemon

Recipe's preparation

    filling
  1. place all ingrediants in a 1'5ltr ovenproff dish dish stir through

  2. pastry
  3. add to bowl flour/sugar/cinnamon/salt/butter to jug and process for 5secs speed4

    add buttermilk and process on interval speed speed4 till a dough is formed you can add alittle more flour through hole in lid and watch till dough comes together

    tip onto floured bench or mat and roll out to 4mm cut into 7cms rounds and layer over fruit leaving slight gaps

    brush top with extra buttermilk and sprinkle with little extra raw sugar and cinnamon

    cook for approx 30-40mins 190 till golden and fruit bubbling through serve with whipped cream or icecream

serve warm with cream or ice cream

    I've never really had rhubarb before so i was a little nervous i wouldn't like it, but it was really nice. I'm not the best at making dough so i think that might have let it down a bit but other than my bad dough making skills the family loved it tmrc_emoticons.)
