Ingredients
APPLE JUICE CORDIAL
- 800 grams Apples ( granny smith mostly), include 2 red apples in the mix
- 2 lemons
- 800 grams water
- 200 gram Demerara sugar(or rappadura), can use raw sugar( will taste a little different)
- 1 tsp citric acid

1.Wash all fruit
2. Slice apples into quarters(leave skin on) peeling out the core(seed), place in jug
3. Chop off both ends off lemon( do not peel the rest) then slice into quarters and place in jug with the Apples.
4.Add water, put lid and mc on and turn dial to "Closed lid" position
5. Press TURBO button twice in 1 second interval then press TURBO button one more time for 3 seconds. Liquid may splash a little so maybe put a small tea towel over lid
6. Open jug and place the simmer basket inside the jug and pour juice into another jug or bowl . Then pour pulp( left over in jug) into a sifter and squeeze out as much juice as you can into the jug or bowl that your liquid juice is in. It make take a couple minutes to do this. Once done discard pulp.
7. Place all juice into Thermomix bowl and put on lid and mc ADD the sugar and cook 15 minutes, Varoma speed 3
8. Once cooked add Citric Acid on speed 5 for 15 seconds
9. Liquid will be very hot so take care when pouring into sterilised bottle or jar of your choosing.
10. Makes up to 1.5 litres of concentrated Apple Juice. Pour 1 part cordial to 4 parts water.
Once tested you can alternate how much cordial to water you prefer personally.

Tip
When cooking with PINK LADY APPLES added I found the cordial to be refeshing and crisp (my favorite)
When cooking with RED DELICIOUS apples added I found cordial to be more like apple juice that are in poppers or shops( my kids favorite)
To prolong shelf life you can also add Tartaric acid as well as citric or increase the citric by an extra tsp
Last for around 4-5 weeks (in my house its gone by week it is gone way before then.

Looks great, but I only got around 750ml out of it? Also used two smallish limes instead of lemon, coz that's all I had. Did I not squeeze enough out of the pulp perhaps?

This was a great way to help use up some apples given to me. I halved the sugar and it was still sweet enough. I also cooked muffins with the pulp. I hope they turn out! Thanks!

Hey Lisa, can you break down what you did? Did you cut the ends of the lemon off, also what apples did you use? I have used granny smith, red delicious and pink ladies. Bitter is usually a lemon thing, did you use fresh lemons hon and also some green granny smiths can be tarty. Depending on how you are with sugar, I would either up the sugar bit by bit or just use a less tarty apples and check lemon isnt too bitter.
What did I do wrong??? It was soo bitter and tangy

Great recipe! I substituted the sugar for xylitol and added 1 tsp tartaric acid as well as the citric acid. I used 500g green apples, 300g mixed frozen berries and 1 lemon plus 1 lime... Delicious!!! Finally a drink alternative for my family who can't have sugar. This will become a staple for sure.
