Ingredients

COCONUT CREAM SAUCE

  • 15 grams garlic cloves
  • 25 grams ginger
  • 10 grams red chilli(or green)
  • 1 --- medium onion(peeled and cut in half)
  • peel of half a lime
  • 15 grams coconut oil or olive oil
  • 5 grams fish sauce
  • 10 grams soy sauce
  • 15 grams Chinese Rice Wine
  • 400 grams coconut cream( 1 tin equivalent)
  • 4-5 medium size zucchinis
  • 500 grams chicken breast pan fried

basil or coriander for garnish

Recipe's preparation

    ZOODLES with coconut cream sauce
  1. 1.Place garlic,ginger,chilli,onion and lime peel into thermomix jug

    2. Blitz  3 seconds speed 5. Put to the side

    3. Add coconut oil, heat  1 minute varoma speed 1

    4. Add garlic,ginger,chilli,onion and lime peel

    5. Saute 3 mins 100degrees Counter-clockwise operation"Counter-clockwise operation"  speed 1

    6. Scrape down sides then add Chinese Rice wine, fish sauce, soy sauce

    7. Cook 5 minutes 100degrees Counter-clockwise operation"Counter-clockwise operation"  speed 1

    8.Add the coconut cream, cook 5 mins 100degrees Counter-clockwise operation"Counter-clockwise operation" speed 1

    9. Peel zuchinni with zoodle maker or potato peeler

    10.Pour boiling water into thermoserver and blanch zucchini for 1 to 2 minutes(depending oh how you want your zoodle cooked)

    11. Season chicken with salt and pepper and pan fry in coconut oil(or oliveoil) slice into strips

    12. Mix zoodles and chicken together and add sauce

    13. Serve immediately and garnish with your favorite herb(basil or coriander)

    14. Enjoy

Tip

You can use either coconut oil or olive oil. 

If you don't have a zoodlemaker, you can just chop roughly or slice thickly  the zucchini

You can add a little brown sugar if you want some sweetness in it

You can also use pasta instead of zucchini

Chicken can be pan fried or steamed or even cooked with the sauce, in thermie 100degrees15 minutes REVERSE speed soft after step 7. Chicken should be cut into thick strips pre cooking

    Plenty of flavour, easy to make.  I pan fried the chicken. Next time I'll cook the chicken in the thermo and do something to thicken the sauce as mine was very runny.
