Ingredients

Tuna Mornay with Hidden Vegetables

  • 1 onion, brown, large, peeled and quartered
  • 220 g cauliflower florets
  • 200 g celery stalk, roughly chopped
  • 1 carrot, roughly chopped (approx 120g)
  • 60 g Nuttelex, or butter
  • 60 g plain flour, gluten free or regular
  • 600 g soy milk, or milk of choice
  • heaped tablespoons savoury yeast flakes, or cheese
  • 1 tsp Dijon mustard
  • 850 g tinned Tuna chunks in springwater, drained
  • 2 --- sweet corn cobs, kernels removed and set aside
  • 1/4 tsp salt
  • pinch black pepper

Recipe's preparation

    Fill large saucepan with water in preparation for cooking rice. Bring to boil and then switch off until needed.
  1. Place onion, cauliflower, celery and carrot into the Thermomix bowl, MC on, chop 3 seconds, speed 5. Scrape down sides of bowl

  2. Add Nuttelex to the Thermomix bowl, MC off, saute 5 minutes, Varoma, speed 1. Scrape down sides of bowl.

  3. Add flour to the Thermomix bowl, MC off, 3 minutes, 100 degrees, speed 1. Scrape down sides of bowl and bottom of bowl well with spatula to loosen any vegetables.

  4. Add milk, savoury yeast flakes, mustard, salt and pepper to the Thermomix bowl, MC on, cook 6 minutes, 90 degrees, speed 2

    Bring your pot of water back to the boil in preparation for your rice. Add desired quantity of rice and cook according to packet directions.

  5. I like to blend the sauce to make it smooth. MC on, Blend"Blend" 30 seconds Speed 8.

  6. Add tuna (break up any larger pieces) and corn to the Thermomix bowl, stir with spatula to combine, MC on, cook 10 minutes, 100 degrees, Counter-clockwise operation"Counter-clockwise operation" Speed 2.

  7. Serve with your choice of rice, pasta, quinoa, zoodles or atop a large baked potato.

Tip

I have made this recipe Gluten Free and Dairy Free as my daughter has Coeliac Disease and a dairy allergy.

As per the ingredients above, I have given the alternatives for those not requiring gf and df or for those wanting to avoid soy milk.

If you haven't taken the corn kernels off the cob prior to starting, do this during the first 5 minute saute step to save time.

If you don’t have the exact vegetables, use veges of your choice. If cauliflower is far too expensive or not good quality, I throw in the same amount in raw cashews instead.

GLUTEN FREE: Not all products are gluten free. Please check cans and other packaging to ensure it doesn't contain gluten or possible traces of.

You can use tinned or frozen corn if you wish, however, I do think that fresh off the cob produces a far better result.

    Very tasty, wasnt quite sure what to expect when making it, but it turned out delicious ! we are making again this week.

    Very tasty and easy to make. Kids requested leftovers for lunch the next day. Will definitely make again. I subbed peas for corn and used normal milk, plus added some extra chopped veggies also.
