- 1 Iceberg Lettuce, rinsed

- 1 bunch bok choy, Cut into thirds
- ½ red capsicum, Cut into large chunks
- 2 cloves garlic
- ginger, 2cm fresh
- 1 onion, quartered
- 1 carrot, quartered
- 2 teaspoons oil
- 2 tablespoons Tamari gluten free soy sauce
- 1 lime, juiced
- 2 tsp Rapadura Sugar
- 500 g pork mince

- Wash and drain lettuce. To carefully remove the lettuce cups whole, without tearing, you can either smash the core on the kitchen bench, or carefully cut the lettuce leaves where they meet the core using a plastic knife. Set aside for later.
- Add carrot, capsicum and bok choy to the bowl. Chop 3 seconds / speed 5. If needed scrape down sides and repeat, otherwise set aside in another bowl.
- Add garlic, onion and ginger. Chop 3 seconds / speed 7. Scrape down sides, repeat if necessary to achieve desired consistency (as I made this for my children, I chopped the last two lots of ingredients up a little bit more than I would have for adults).
- Add oil, cook 100 degrees / 2 minutes / speed 1.
- Add broken up mince to the bowl. Cook 8 minutes / 100 degrees / "Counter-clockwise operation" / speed 1.
- Add reserved vegetables, tamari, rapadura sugar and lime.- mix 5 seconds / "Counter-clockwise operation" / speed 3. (this is to just quickly combine the mince, sauce and vegetables)
- Cook 6 minutes / 100 degrees / "Counter-clockwise operation" / speed 1. If at the end of this time the mince is not cooked through, repeat for a further 2 minutes. Season to taste.
- Place simmering basket into your thermoserver. Pour the mince mixture into the steaming bowl. This allows you to drain away excess liquid from the mince prior to serving.Spoon desired amount into lettuce cups, fold and eat.

You can add additional vegetables to this dish. I kept it pretty simple to please the kids. Also if you do not need to be gluten free, you can use any soy sauce you wish.Reserve the excess liquid so that if you have leftovers for the freezer, you can add the liquid back to the mince to retain flavour.

Quite nice although I opted for a pinch of salt. I also didn't have bok choy but I had some cabbage. Still nice.
This recipe was nice but not what I'm used to. It needs more salt and soy sauce.
