Ingredients
Coriander Pesto
- 2 cloves garlic, fresh and peeled
- 100 g coriander, fresh, leaves and stems
- 50 g Cashews, raw unsalted
- 50 g walnuts
- 40 g sunflower seeds
- 40 g seeds, hemp
- 20 g pepitas
- 25 g apple cider vinegar
- 3 tbsp savoury yeast flakes
- 160 g Avocado Oil
- 1/4 tsp salt

- Place garlic, coriander, cashews, walnuts, sunflower seeds, hemp seeds and pepitas into mixing bowl and chop 5 seconds/speed 7.
- Scrape down the sides of the mixing bowl and chop 5 seconds/speed 7.
- Add ACV, avocado oil, savoury yeast flakes and salt. Mix 10 seconds/speed 4.
- Check consistency, remembering that it will firm up more in the fridge, so add additional oil if you wish.
The flavour will develop more too the longer it sits.
Place into sealable container in the fridge until ready to serve.
Tip
If you don't have the specified nuts available, use your own preferred nuts.
You can replace the ACV with lemon juice.
You can even throw in some spinach leaves for additional nutrition.
You can replace the savoury yeast flakes with parmesan if you don't need it to be dairy free - if using parmesan, chop that following the guidelines in the front of your Basic Cookbook before proceeding with step 1.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
