  • sauce
  • 1/2 cup of brown sugar
  • 1/2 Cup of water
  • 1 lime, grate the zest and juice
  • 1 red chilli, seeded if you wish
  • 2 cm piece of ginger
  • 1 clove of garlic
  • 2 spring onions, roughly chopped
  • 1/2 cup of corriander
  • 1 level tablespoon of sesame oil
  • fish
  • 4 pieces of firm white fish, I used Hoki - skin off

  • 1 and1/3 cup of red rice

Recipe's preparation

  1. Sauce

    Add the chilli, garlic, spring onion, corriander and ginger to the bowl, chop 5 seconds, speed 5, scrape down bowl and repeat

    Add the brown sugar and water, lime zest and juice and cook 5 minutes 100 degrees, speed 1

    Pour sauce into a jug and add seseme oil and stir to blend

    Rice

    Place 1 and 1/3 cup of red rice to basket and rinse well

    With out washing the bowl add one and half liters of water, place the basket in the bowl and cook 20 minutes Varoma speed 4

    While this is cooking place your fish in the the Varoma trays making sure the steam holes are not covered

    When the 20 minutes are up,  do not remove the rice and carefully remove the MC and place the Varoma with the fish on top and cook for 15 minutes, Veroma, speed 4 

    This will insure that the rice has had 35 minutes cooking time and the fish 15 minutes to steam

    Serve with the sauce over the fish and drizzled over the rice
