Ingredients
Prawn & Crayfish Pie
- 150 grams whole milk
- 150 grams fish stock
- 100 grams Butter
- 50 grams plain flour
- 1 teaspoon English mustard powder
- 3 whole cloves
- 1 bay leaf
- 150 grams thickened cream
- 50 grams Mature Cheddar or Gruyere Cheese, Grated
Pie Filling
- 750 grams mashed potato
- 100 grams Mature Cheddar or Gruyere Cheese, Finely Grated
- 375 grams mixed frozen vegetables, thawed
- 400 grams Raw Prawns Meat, Raw, Peeled, Deveined
- 300 grams (approx. 3)Frozen Raw crayfish tails., 1.5 cm Thick Sliced Medallions
- 20 grams Panko Crumbs

Heat the oven to 200C.
While still frozen, slice Crayfish into 1.5cm medalions and dicard the shells.
For the sauce, mix the milk and stock in a jug and set aside.
Grate cheese and set aside.
Melt 50g of the butter 40 sec, 50C, speed 4 in bowel then stir "Gentle stir setting" in the flour, cayenne pepper and mustard powder to make a smooth paste.
Gradually whisk in the milk and stock mixture speed 4 until you have a thick, smooth sauce.
Add the cloves and bay leaf then stir in the cream and cheese, heat 50C, for 5 minutes and season to taste, and set aside.
Stir 75g of the grated cheese into the mash.
Layer the medalions, spead half the vegetables into any gaps then the prawns finaly the last of the vegetables into the dish.
Remove and discard the cloves and bay leaf from the sauce and pour over the fish and top with an even layer of mash.
In a seperate bowl combine the remaining cheese with the breadcrumbs.
Sprinkle the mixture over the mash and then dot over small dabs of the remaining butter.
Place on a baking tray and cook for 45-55 minutes or until heated through and bubbling.
