Ingredients
Apricot Chicken
- bunch Parsely
- 1 onion, Quartered
- 2 cloves garlic
- 20 gram Oilve Oil.
- 400 grams Apricot Halves.
- 50 grams white wine
- 50 grams Thermomix stock concentrate, Vege or Chicken
- 200 grams apricot nectar
- 2 tablespoon ground cumin
- 2 tablespoon Ground Coriander
- 1/2 teaspoon ground cinnamon
- 800 grams Chicken Breast Cubed
- 1 tablespoon cornflour
- 2 tablespoon water

Place Parsley in bowl and chop 6secs speed 8 - Scrape out set aside
2. Put Onion and Garlic in bowl and chop Speed 5 for 5 secs
3. Pour in oil and sauté onion and garlic 3 mins 100 deg Speed 1
4. Add Apricot Halves, White Wine, Stock Paste, Apricot Nectar, Ground
Cumin, Ground Coriander and Cinnamon. Cook for 4 mins at 100 degrees
on Speed 1
5. Add cubed Chicken and Parsley and cook for 10 mins 100 degrees
Reverse Slow Speed and Stir
6. Add Cornflour and water and cook for another 2 mins at 100degrees
Reverse Slow Speed
Ensure chicken is cooked before serving.
Place Apricot Chicken in ThermoServer. Serve with Cous Cous.

Seasonal Vegetables could also be added to this dish as well.

I used two TEASPOONS of each cumin and coriander and it was lovely.
Not sure if the TABLESPOON measurement is a typo as it seems excessive?
Hi. mine has never shredded and has stayed in cube form. You could always add the butterfly attachment to make certain.
Hi, does this shred the chicken or does it stay in cubes?

I was disappointed with this dish. There was no apricot flavour at all......two tablespoons of both cumin and coriander seemed way too much - this is all I could taste. Sorry
Yummy and easy, looking forward to eating this again and again, my 14 month old ate it all up too.
My husband isnt really a fan of apricot chicken but he loved this one. It is now a regular at our table
Thanks for this great recipe. Even though I didnt have tin apricots I just ended up using a full can (400g) of nectar and added a few chopped up dried apricots for sweetness. It still tasted fab. I need to add some hidden veg next time for my 3 yr old, has anyone got any suggestions? Cheers
Thank you for the recipe, it was quick and easy for midweek meal. As I am on a diet I made this recipe up into eight smaller meals by putting the mix into ramekins when finished so I had my portion sizes. i also added 1cup sweet potatoe and some frozen mixed veggies to the mix before adding the corn flour so that I had a complete meal. I topped the ramekins with a layer of Filo pastry and placed into oven for 15 minutes to brown the pastry. I have frozen the remaining meals so that I can pull these out later when my family is having something I can't eat. The little meals were very tasty only approximately 300 calories each.

Wow yum great recipe and i even stuffed up and forgot to set the parsley aside and it was cooked with the onion and garlic, my 2.5 year old loved it too, might try to modify it with some hidden veg next time Thanks for sharing this xx
