Ingredients

Avocado cheese stuffed chicken breasts wrapped in bacon - all in one dinner

  • 1 avocado
  • 4 chicken breasts
  • 4 slices Tasty cheese
  • 8 slices short cut bacon
  • 1 paprika
  • 1 salt
  • 1 pepper
  • 8 Chat potatoes
  • 1 Vegetables of choice, Broccoli, carrot, zucchini
  • 800 grams hot water
  • 2 tablespoons Vegetable or Chicken Stock Paste

Sauce

  • 1 Handful parsley
  • 2 cloves garlic
  • 50 grams Dry white cooking wine
  • 50 grams Cream (any is fine)
  • 30 grams Butter
  • 2 teaspoons cornflour
  • 1/2 tablespoon Mustard - wholegrain or dijon
  • 200 grams Strained cooking water, Retained from steaming

Recipe's preparation

    Chicken
  1. 1. Butterfly breasts so they open like a book - careful not to cut open
    Lay bacon rashers over the top of cling wrap and place chicken on top
    Sprinkle paprika, salt and pepper over the breasts, then top with avocado and tasty cheese, grated or in slices

    2. Firmly roll each breast to form a "sausage" being careful not to wrap cling wrap inside of the roll, wrap firmly and twist ends together - if cling wrap doesn't stick tie with baker's twine

    3. Add garlic and parsley to bowl and chop 5 seconds, speed 7, scrape down bowl and repeat. Remove from bowl and set aside

    4. Add cooking water and stock paste to bowl, add quartered potatoes (skin off or on your preference) to basket and then add chicken rolls into varoma (utilizing both bottom and top layers)
    Cook 25 min/varoma/speed 4

    5. Add broccoli, carrots, zucchini or other vegetables of choice and cook 7 min/varoma/speed 4

    6. Remove vegetables to thermo server and set aside - optional whilst sauce is cooking carefully remove rolls from cling wrap and crisp up bacon in a preheated oven or pan

  3. Using the basket, strain the cooking water into a measuring jug and pour back into the Thermomix bowl 200gms water
    Add remainder ingredients for the sauce including the chopped parsley and garlic
    Cook 8 mins/90 degrees/ speed 4

    Serve drizzled all over chicken and vegetables

    My only negative is my chicken too dry. Think cooked a little too long. Other than that it was totally delicious
