Ingredients

  • 500 g water
  • 300 g pumpkin, peeled and cut into pieces (approx. 2cm)
  • 1 stalk vine-ripened cherry tomatoes (approx. 6)
  • 3 stalks broccolini, trimmed
  • 130 g Beef fillet
  • 0.25 tsp freshly ground black pepper, plus extra for seasoning
  • 1 tsp Butter
  • 0.25 tsp salt

Recipe's preparation

  1. Place water into mixing bowl. Place Varoma dish into position and weigh pumpkin into it. Secure Varoma lid and steam 7 min/Varoma/speed 1.

  2. Insert Varoma tray and place tomatoes and broccolini onto it. Secure Varoma lid and steam 8 min/Varoma/speed 1, or until pumpkin is soft and vegetables are cooked to your liking. Meanwhile, continue with cooking fillet.

  3. Place a non-stick frying pan over a high heat. Season steak with pepper. Fry 3-4 minutes each side, or until cooked to your liking. Cover and set aside to rest (approx. 5 minutes).

  4. Remove Varoma. Transfer tomatoes and broccolini into a thermal serving bowl (ThermoServer) or other large bowl and cover to keep warm. Set aside. Discard cooking liquid.

  5. Insert butterfly whisk. Place pumpkin, butter, salt and pepper into mixing bowl and mix 5 sec/speed 4, or until smooth.

  6. Transfer pumpkin mash onto a serving plate and serve immediately with beef fillet, tomatoes and broccolini on the side.

Tip

Cook beef fillet while vegetables are steaming to save time.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     As a bit of variation, cook the pumpkin in the simmering/ rice basket,
    Brocolli/cauliflower in varoma, chicken on top tray in varoma.
    Use flavorings and mash pumpkin as recipe says.Wink

    Very yummy.
    I swapped pumpkin for sweet potato and extended the cooking time by 10 mins.
