Ingredients

Pork Stew

  • 2 tomatoes (approx. 200 g) deseeded and cut into eighths
  • 2 brown onions (approx. 250 g), cut into quarters
  • 1 garlic clove
  • 3-4 sprigs fresh sage, leaves only
  • 30 g Grapeseed Oil
  • 2 tbsp smoked paprika
  • 3 tsp caraway seeds
  • 800 g pork fillet, trimmed and cut into pieces (approx. 2-3 cm) (see Tips)
  • 250 g tomato passata
  • 3 tbsp tomato paste
  • 1 tsp Chicken stock paste (see Tips)
  • 200 g fresh mushrooms, cut into slices
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 0.5 red capsicum (approx. 70 g), deseeded and cut into thin slices (5 mm)
  • 0.5 green capsicum (approx 70 g), deseeded and cut into thin slices (5 mm)

Cauliflower pilaf and broccolini

  • 4-5 sprigs fresh oregano, leaves only
  • 500-550 g cauliflower, broken into florets (3 cm)
  • 2 garlic cloves
  • 4 spring onions/shallots, trimmed and cut into quarters
  • 4 sprigs fresh flat-leaf parsley, leaves only
  • 4 sprigs fresh coriander, leaves only
  • 1 tsp Chicken stock paste (see Tips)
  • 540 g water
  • 200-250 g broccolini, trimmed
  • 80 g natural yoghurt, to serve (optional)

Recipe's preparation

    Pork stew
  1. Place tomatoes into a thermal serving bowl (ThermoServer) or another large bowl and set aside.

  2. Place onion, garlic and sage into mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.

  3. Add oil, paprika and caraway seeds and sauté 2 min/Varoma/speed 2.

  4. Add pork and cook 2 min/90°C/Counter-clockwise operation"Counter-clockwise operation" /speed 1. Gently stir using spatula.

  5. Add tomato passata, tomato paste and stock paste and cook 6-8 min/90°C/Counter-clockwise operation"Counter-clockwise operation" /speed 1, placing simmering basket instead of measuring cup onto mixing bowl, unitl pork is tender and cooked through.

  6. Add mushrooms, salt, pepper and capsicums and cook 2 min/90°C/Counter-clockwise operation"Counter-clockwise operation" /speed Gentle stir setting"Gentle stir setting" , placing simmering basket instead of measuring cup onto mixing bowl lid. Transfer into a thermal serving bowl (ThermoServer) with reserved tomatoes, stir to combine with tomatoes and cover to keep warm. Clean dry mixing bowl.

  7. Cauliflower pilaf and broccolini
  8. Place oregano into mixing bowl and chop 5 sec/speed 7. Transfer into a small bowl and set aside.

  9. Place cauliflower into mixing bowl and chop 2-3 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 5. Transfer chopped cauliflower into Varoma dish and set aside.

  10. Place garlic, spring onion/shallots, parsley and coriander into mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.

  11. Add stock paste and 40 g of the water and heat 30 sec/50°C/Counter-clockwise operation"Counter-clockwise operation" speed 1. Pour mixture over cauliflower in Varoma and mix well using spatula (herb mixture is thick and shouldn't drip through holes in Varoma).

  12. Place remaining 500 g water into mixing bowl, then place Varoma into position, insert Varom tray and weigh broccolini into it. Secure Varoma lid and steam 12-15 min/Varoma/ speed 2, until broccolini and cauliflower pilaf are cooked to your liking.

  13. Serve pork stew with cauliflower pilaf and broccolini. Garnish with chopped oregano and yoghurt (optional).

Tip

Pork fillet, is also sold as pork tenderloin. We suggest using the highest quality pork that you can afford. Lean pork steak, with all visible fat removed, can also be used in this recipe.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    Just didn't quite click.

    Sliced the pork thinner after seeing the comments, and was cooked using these timeframes. I also put the capsicum in earlier.

    However, the balance of smokiness and sauce was out, even after using yoghurt to even out texture, but overall the flavour don't have a depth of flavours for the family.

    Had been looking forward to this meal, but was disappointed.
    I agree with previous comment, that it would have been better cooked on stove top or oven. Capsicum was raw, overall I felt the dish was not hot enough, probably because of the short cooking time. It tasted like raw onion to me. Will not make again.

    I think this recipe is more suited to stovetop. The stew was very tasty, but capsicum wasn't cooked. Pilaf was tasty, but broccolini needed longer than cauliflower.

    I only made half the quantity and didn't adjust times at all.

    I'd make this again, but would do the sauce in the Thermomix and cook the stew on the stove or slow cook. I'd still steam the pilaf, but would put cauliflower on top of broccolini (and I'd add asparagus in last few minutes).

    Just made this today and the family loved it. I made some adjustments to suit our tastes and added a little sugar - I think it just lifts any currie or stew. I also slow cooked the parpika pork for one hour in the oven on 160 before serving as I had made the dish in the afternoon. It was perfect and not overcooked. Delicious.

    I liked the flavour of this dish but unfortunately my pork was tough and the cauliflower was very watery.. and that was after I cooked it for less time.

    I only made the cauliflower pilaf, tasted great and was easy. Great way to try something new with cauliflower for a change.

    Surprised my partner with this meal tonight (I am not a great cook so this was a surprise). The house smelled incredible and the taste was simply amazing (and feeling pretty proud of myself). This was fun to prepare and easy to follow. Thank you for the experience.
