Ingredients
TACO SEASONING
- 2 teaspoons chilli flakes
- 1 tablespoon Onion powder
- 1 tablespoon Garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon Ground Coriander
- 1 teaspoon paprika
- 1 teaspoon ground oregano
- 1 teaspoon sugar
- 1/2 teaspoon salt
TOMATO SALSA
- 1 clove garlic, peeled
- 1 red chilli, (for less heat, remove the seeds)
- 1 onion, peeled and halved
- 1/2 green capsicum, seeds removed and halved
- 20 gram olive oil
- 400 gram Diced Tinned Tomatoes
CHICKEN & MUSHROOM FILLING
- 1/2 bunch parsley
- 1 clove garlic, peeled
- 2-3 spring onions, sliced (white and green)
- 20 gram olive oil
- 650 gram Chicken thigh fillets, diced into 3cm cubes
- 200 gram mushrooms, sliced
- 400 gram can of refried beans
- 1 tablespoon taco seasoning, from above
EXTRAS
- 10 large tortillas
- 150 gram Tasty cheese, grated

Add all taco seasoning ingredients into the Thermomix jug and mill for 30 seconds / Sp 9. For these burritos you will only need to use 1 tablespoon of the seasoning but you can store the balance in an air tight jar and use it anywhere where taco seasoning is required. One sachet of commercial Taco Seasoning is equivalent to 3 tablespoons of this homemade version.
(if you haven't already done so... cube the cheese to ice-block size and blitz on Sp 9 / 5 secs ). Set it aside.
Add garlic and chilli to TM bowl and chop on Sp 7 / 3 seconds. Add onion and capsicum and chop on Sp 5 / 3 seconds. Add olive oil and saute for 5 mins / 100° / Reverse / Sp 1
Add a can of diced tomatoes (do NOT drain the can) and cook on Varoma / 15 mins / reverse / Sp 2 (MC off!)
This salsa will be quite thick now. Put it aside and allow to cool.
PRE-HEAT OVEN to 180°
Add parsley and garlic to the TM bowl. Blitz on Sp 7 / 5 seconds.
Add spring onion slices and olive oil and saute at 100° / 3 mins / reverse / Sp 1 / MC off
Add diced chicken and sliced mushrooms and cook on 100° / 10 mins / reverse / Sp 1 / MC off.
Using the SIMMER BASKET (by placing it inside the Thermomix bowl, on top of the cooked chicken mixture) drain the liquid out of the TM bowl, reserving 40g to add back into the bowl.
Add the refried beans, the 40g of reserved cooking liquid and 1 tablespoon of the Taco Seasoning you prepared earlier and cook on 100° / 3 mins / reverse / Sp 1.

Tip
This meal is very easy to make and one lot of the taco seasoning will make SEVERAL of these meals so just store the left over seasoning in a jar and see how easy it is to whip up next time!

So so good!!! I didn't have mushrooms, so left them out but followered the recipe otherwise.. Was delish!
Chicken Burritos - These were a huge hit! I used Skinnymixer’s Mexican spice mix & Skinnymixer’s refried beans. I wouldn’t normally associate mushrooms with Mexican food, but wow, what a sweet juicy surprise! I ended up baking for 25 minutes as we like the cheese browned on top. This is a 10 star recipe! Tasty easy dish. Used store bought taco seasoning, will double it next time. Made with normal wraps for rest of family and a few with GF wraps for me and turned out perfectly. Didn't throw out chicken broth, used it to make rice with in rice cooker, went well with the meal.
