Chicken Casserole
- 1 onion, halved
- 2 cloves garlic, peeled
- 40 grams olive oil
- 1 sweet potato, 3cm cube
- 3 carrots, 2cm chunks
- 1 bay leaf
- 1 teaspoon paprika
- 1 heaped tablespoon veg/chicken stock paste
- 1 can diced tomatoes, 400g
- water
- 1 can corn kernels, drained
- 2 tablespoons Gravy powder, optional
- cooked chicken, Cubed,approx. 2 breasts worth

- Add onion and garlic to TM bowl chop 5sec/sp4, scrape down bowl.
Add oil and saute 5min/varoma/sp1.
Add sweet potato, carrots, bay leaf, paprika, stock paste, diced tomatoes and enough water to fill to the 2L line (approx 2 1/4 cups).
Cook 25min/varoma/"Counter-clockwise operation" "Gentle stir setting" .
(if required add chicken to varoma dish and cook now)
Add cooked chicken, corn and gravy powder, cook 5min/varoma/"Counter-clockwise operation" "Gentle stir setting" .
Serve.
Tip
Use of butterfly throughout recipe is optional.
If you find the mix is bubbling over replace MC for basket on lid.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Thank you for the recipe. I made a few changes to suit what I had on hand.
I made this tonight with some changes.
I didn't have onion so I used shallot. After blitzing I added chopped mushrooms then saute.
Vegetables I added was sweet potato, celery, zucchini and corn. Cooked chicken mince with the vegetables and thickened at the end with corn flour. Oh and topped with raw cashew.
Delicious.
That was a great dish.... I also added pineapple and spring onion to it... and it was delicious thank you for posting this up
