Ingredients
Chicken & Potatoes w Lemon Caper Butter using the Egg Boiler Mode
- 1 tablespoon pickled capers
- 0.5 portion lemon, zested
- 10 grams lemon, juice
- 60 grams Butter, unsalted, cold, cubed
- 3-4 pieces chicken, schnitzels, uncrumbed
- 8 pieces potatoes, chat, sliced into thick discs
- 3 pieces carrots, peeled, sliced into battons
- 80 grams Sugar snap peas
- 20 grams olive oil, for frying
- 100 grams white wine

- * place capers, lemon zest & juice into bbl & chop 2 sec / sp 5 & scrape down
* add butter & salt, mix 20 sec / sp 4. Scrape down & repeat if necessary to make sure it is mixed through
* place in the fridge to set
* when set slice butter into discs and set aside enough butter discs to put on top of each piece of protein - * place your sliced potatoes & a pinch of salt into the TM6 bbl & top up with 1L water (make sure your potatoes are covered)
* layer carrots in the bottom varoma dish & peas in the top varoma tray
* select Egg Boiler^ mode & turn the dial around to the hard boiled setting. Put your varoma in place over the potatoes (approx 20 mins). Once cooked drain potatoes and set veg aside in your thermoserver to keep warm - * approx 5 minutes before the end of the potato cook time
* add oil and half the butter to the pan & cook the chicken
* add drained potatoes in the pan with the chicken & toss to coat. Add more butter if needed & remove the chicken & potatoes from the pan
* Add a splash of white wine to deglaze the pan while serving up your meal
* Pour sauce over chicken & place reserved disc of butter on top of each

^ Egg Boiler is a function of the TM6 only
* You can replace the chicken with fish or prawns
* Chicken Schnitzel are used because they cook quickly and this is a fast meal
* Easily increase the volumes to create a family meal
* You can double the butter and freeze for 3 months
* Adaptable to other TM models without the egg mode

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
