Ingredients
Chicken Marinade
- 2 stalks lemongrass
- 3 cm ginger, stem
- 60 grams cornflour, gluten free
- 1200 grams skinless chicken thigh, cut each fillet into 3-4 lengthways
Satay Sauce
- 1 portion red onion, cut in half
- 2 cloves garlic
- 20 grams olive oil, for frying
- 2 pieces long red chillies, cut each chilli into 3, deseed if necessary
- 1 stalks lemongrass, chop into 2cm pieces
- 130 grams Peanut Butter, smooth
- 1.5 level tablespoons light brown sugar, approx 20g
- 1 portion lime juice, freshly squeezed, approx 45g
- 270 grams thick coconut cream
- 80 grams kecap manis
- 100 grams water
Assembly
- 500 grams Sushi Rice
- 1000 grams water
- 2 portions Lebanese cucumber, diced
- 1 portions coriander, garnish
- 3 heaped tablespoons crushed nuts, garnish
- 1 bunch broccolini
- 2 tablespoons oil, for frying
- 1.5 tablespoons kecap manis
- 1.5 tablespoons light soy sauce

- chop lemongrass & ginger 4 sec / sp 10
add to a bowl with cornflour
cut each thigh into four pieces & pop into cornflour mixture. Massage in marinade so each piece has a nice coating
marinate for 15+ minutes - put onion & garlic into bowl chop 3 sec / sp 5.5. Scrape down bowl. Add oil & saute 3 mins / 120 deg / sp1
add chilli (seeds optional) & lemongrass, chop 6 sec / sp 6. Saute 3 mins / 120 deg / sp1
add peanut butter, sugar, lime juice, coconut cream & water. Cook 12 mins / 90 deg / sp1
add 70g kecap manis & blend 40 sec / sp6
season with P & S & set aside. *Freeze your sauce at this stage - Weigh sushi rice in simmering basket & rinse under running water. Put water into bbl, place simmering basket back into bbl & cook 10 mins / 100 deg / sp 4. MC in
Remove MC, Pop your varoma on cook 10 /100 deg / sp 4 to steam broccolini
Heat oil in a heavy based pan & cook chicken in batches until crispy & brown.
Add kecap manis & light soy, stir through until lightly caramelised
Add satay sauce & cook 2 mins before turning off heat
Assemble sushi rice, chicken & broccolini in a bowl & sprinkle with coriander & crushed nuts. Serve with a slice of lemon & diced cucumber for freshness

* This makes a batch big enough for my big family. If you cook half the amount of chicken, you can freeze half the sauce for another day. The sauce freezes & defrosts beautifully, or cook it all and have leftovers as sushi.
**Replace the Sushi Rice with Zucchini Noodles or Soba Noodles for variation

Sensational Satay!
The two stars of this dish are the crispy chicken strips and the creamy satay sauce. I was impressed with the depth of flavour in the sauce and loved the accompaniments (you can never have too many greens).
Not wanting to have to wash up my Varoma (the bane of my life 😣), I cheated and did my broccolini in the microwave. 😅
Each member of my family (Mr Meat & Three Veg and Miss Fitness Fanatic) gave this meal the thumbs up....winning.
BTW You need to add another stick of lemongrass in the satay ingredients' list and oil to sauté 😊
