Recipe's preparation
- Cut 1500g Chicken Breast into equal bite sized pieces or strips (uniform sizing will cook evenly). Set aside in medium/large container with a lid to add marinade
- Into BBL add 3 teaspoons Salt, 3 teaspoons Onion Powder, 4 1/2 teaspoons Garlic Powder, 3 teaspoons Paprika (see notes to store at this point) then add 150g Buttermilk. Mix 30 min/speed 6
- Pour over the chicken and set aside in the fridge to marinate for 2 hours (see notes)
- Set up your crumbing station with a tray to individually lay out your chicken (can stack by putting sheets of baking paper down before laying the next layer). 1x baking tray to lay chicken on; 1x bowl to have 3 cups Panko Breadcrumbs in
- Into BBL add 6 Egg Whites and mix 15 sec/speed 4
- Add 150g Cornflour to egg whites and mix again 30 sec/speed 4 until combined. Should be a thick batter, scrape down sides and mix again if needed
- Pour your batter over your chicken to coat and then dip in the Panko, turning chicken over to coat. Lay flat on the baking tray until ready to fry
- Deep fry the chicken in small batches until 3/4 cooked (see notes). Once all the chicken has been par cooked you can finish cooking in bigger batches. This will ensure the chicken is ready all together and still hot
- Serve with Kewpie, Siracha or Pesto
Tip
1: premake a big batch of seasoning without the buttermilk to save time in the future or gift. Having this spice mix on hand makes it easy for bigger kids to create meals for themselves 2: if you have one of our 2.7L Vac-U-Seal containers you can cut your marination time down to just 15-20 mins. Removing the air speeds up the marinating process 3: The chicken will continue to cook after it has been removed from the oil when par cooking, letting it sit for a few mins while cooking the rest of the chicken in smaller batches will cook your chicken through for a juicier end result … who doesn’t like juicy chicken !!

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
