Ingredients
Chicken Puttanesca
- 400-500 g Chicken Tenderloins, Breast, or Thighs, If using breast, cut into 3-4cm wide strips
- 1 tbsp extra virgin olive oil
- 1 tsp Fish Sauce*, *Optional - but gives extra depth
- 2-3 cloves garlic
- 600 g cherry tomatoes
- 100 g Mixed Marinated Pitted Olives
- 2 tbsp baby capers, Rinsed and drained
- 1 bunch fresh basil leaves
- Salt and Pepper - To Taste
- 150 g Tomato Paste / Passata
- 1 tbsp TM Chicken or Vegetable Stock
- 200 g water
- 1 tbsp Red Chili Flakes

Place garlic cloves in mixing bowl, chop 3 sec, speed 8
Add olive oil and saute 2 min, varoma, speed 1
Add all other ingredients EXCEPT the chicken and basil leaves, cook 3 min, varoma, speed 2
Place chicken in varoma tray (I line tray with wet baking paper first)
After the three minutes, scrape down the sides of the mixing bowl Place the varoma on top of the mixing bowl, and cook 15-17min, varoma, speed 1
Stir basil leaves through sauce, let sit for 2-3 minutes before serving over cooked chicken
Delicious served with a side salad and homemade bread!
Tip
Make sure all olives in the mix are pitted. Got a mix with whole sicilian olives recently and didn't realise they still had pits, made for a very crunchy (alebeit very tasty..) meal!

Very delicious. I used anchovies instead of fish sauce and added 4 chillies. I also used an entire 700 ml bottle of passata as it would have been wasted in the fridge. Served over pasta... winner, winner, chicken dinner!
Lovely flavour. I made the mistake of pureeing the sauce (as my husband doesn't like chunky sauce) and it turned out a very unappealing colour. I recommend following the recipe as is!
i pureed the sauce as i dont like olives on their own. it was delicious. would b fine without the chicken. served over spaghetti/fettucine.
