Ingredients
Chicken mango curry
- 20 g oil
- 500 g chicken thigh, skin off
- 1 Medium onion. Or, Equivalent amount of leek
- 2 cloves garlic
- 1 level tsp curry powder
- 1/2 level tsp ground chilli powder
- 1/2 level tsp tumeric
- 1/2 level tsp cinnamon
- 160 g coconut milk
- 1 heaped teaspoons chicken stock paste
- 115 g Boiling water
- 300g Mango, cubed, (Approx 2, Can use tinned)
- 50g cashew nuts

- Chop onion and garlic. Chop 10 seconds, speed 5. Scrape down.
Add oil, curry powder, ground chillies, tumeric and cinnamon. cook 3 min, "Counter-clockwise operation" "Gentle stir setting" , Varoma temp
scrape down, and scrape bottom of the bowl to loosen the cooked paste.
Add boiling water, stock paste, coconut milk. Season with pepper.
Add chicken, chopped in 3cm chunks.
Cook "Counter-clockwise operation" speed "Gentle stir setting" , 15 min, MC off
Check if chicken is cooked, cook longer if required.
Add 3/4 of mango chunks and cashews and cook a further 1minute "Counter-clockwise operation" speed 1.5.
Stir remaining mango and cashews in before serving.
serve with rice or flat bread

Tip
If it is not as thick as you like use a slurry of 2 heaped teaspoons of cornflour with water and cook for a further 3 minutes at 100°, "Counter-clockwise operation" "Gentle stir setting" .
Freezes well
coconut milk can be substituted with milk and 1 teaspoon of Queen natural coconut essence. Also cream is a suitable substitute

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
