Ingredients

Sauce

  • 1 Small brown onion, peeled and halved
  • 1 clove garlic, peeled
  • 1 tablespoon olive oil
  • 1 teaspoon dried ginger
  • 800 grams canned apricot halves in juice
  • 90 grams tomato paste
  • 1 tablespoon Vegetable stock paste
  • 2 tablespoons Raw Honey
  • 150 grams water

Chicken

  • 900 grams chicken breast, cut into even strips approx. 3cm wide or use tenderloins
  • salt and pepper to taste, (remember the vegetable stock paste is salty)

Accompaniment

  • cooked rice to serve

Recipe's preparation

  1. Add onion and garlic to Closed lid"Closed lid" and place lid on Closed lid"Closed lid"
  2. Chop 3 secs/speed 7/MC on
  3. Scrape down sides of bowl with spatula
  4. Add olive oil to Closed lid"Closed lid" and place lid on Closed lid"Closed lid"
  5. Cook 3 mins/varoma/speed 1/MC on
  6. Scrape down sides of bowl with spatula
  7. Add ginger to Closed lid"Closed lid" and place lid on Closed lid"Closed lid"
  8. Mix 1 sec/speed 3/MC on
  9. Add apricot halves (with juice), tomato paste, vegetable stock paste and honey to Closed lid"Closed lid" and place lid on Closed lid"Closed lid"
  10. Chop 10 secs/speed 7/MC on
  11. Scrape down sides of bowl with spatula
  12. Add water to Closed lid"Closed lid" and place lid on Closed lid"Closed lid"
  13. Place chicken pieces into varoma bowl and tray, ensuring there are spaces to let the steam circulate. Place varoma on top of lid
  14. Cook 7 mins/varoma/speed 2
  15. Turn chicken and move around varoma to ensure all chicken will be cooked. Cook for a further 7 mins/varoma/speed 2.
  16. Check that all chicken is cooked. If not cook for a further minute or 2, but do not overcook as the chicken will be dry.
  17. Place chicken on a bed of cooked rice and pour over sauce.

Tip

If you prefer the apricot halves to remain whole don't add them until you add the water to the Closed lid"Closed lid"
