Ingredients

Chorizo and Chilli Beans

  • 1 brown onion, halved
  • 2 cloves garlic
  • 1 - 2 whole fresh red chilli
  • 30 grams Olive Oil.
  • 2 tsp Ground Cummin Powder
  • 2 teaspoons Smokey Paparika
  • 1.5 tsp Ground Cardamon powder
  • 400 grams can of diced tomatoes
  • 400 grams red kidney beans, Drained and rinsed
  • 400 grams butter beans, canned, Drained and rinsed
  • 3 Spanish Chorizos, quartered and sliced
  • 2 tablespoon vege stock
  • 3 tablespoon tomato paste
  • 600 grams water
  • sour cream, for garnish

Recipe's preparation

    Chorizo and Chilli Beans
  1. Place halved onion, cloves of garlic and chilli in mixing bowl chop for 3 secs/speed 7.  

  2. Add ground cummin powder, ground cardamon powder, smokey paparika  and olive oil and saute for 3 mins/varoma/speed 1.

  3. Add can diced tomatoes, water, vege stock, chorizo, drained and rinsed butter beans and red kidney beans, tomatoe paste and 600g water.  Cook for 18 mins/varoma/reverse/soft speed.

  4. Serve topped with sour cream on a bed of rice
