Ingredients

Soy & garlic chicken

  • 4 chicken thighs, cut in 2cm pieces
  • 50 g oyster sauce
  • 50 g soy sauce
  • 1/4 red onion
  • 2 Garlic cloves peeled
  • 1 stalk coriander, roots and stem included
  • 1/2 teaspoon sesame oil
  • 1 tbsp Shaoxing rice wine
  • 1 cube ginger
  • 200 g basmati rice
  • Veggies, I used carrots, snow peas and chinese cabbage
  • 900 g water, boiling

Recipe's preparation

    Prepare Marinade
  1. Chop garlic, ginger, red onion and coriander for 3 seconds, speed 6

  2. Add soy, shaoxing, sesame oil and oyster sauce and mix for 4 seconds, speed 4

  3. Add chicken pieces to marinade mixture and stir for 2 seconds, Counter-clockwise operation"Counter-clockwise operation" speed 3

  4. Leave chicken in TM bowl and put whole bowl and lid in fridge if possible to marinate for 1-2 hrs (you can skip this step if you are short on time, but it will taste nicer if you can leave it to marinate for a while)

  5. Tip chicken out of TM bowl onto top tray of Varoma and spread evenly, ensuring there are steam holes visible.  DON'T WASH THE TM BOWL!!

  6. ** Optional: Add vegetables of choice to bottom half of Varoma (you may want to do this with only 10 minutes remaining if you have soft vegetables, but harder vegetables like carrots etc can take the 15 minutes to steam. Use your steaming guide in the front of your EDC to decide when to add the vegetables)

  7. Insert basket into TM bowl. Weigh rice (between 200-400g depending on how much you need for your family. We use around 200g for 2 adults and 3 small children). Add 900g of water. To rinse rice, put the lid on and turn speed up to 4 for 5 seconds or so until the rice is all wet (look through the top while it is rinsing)

  8. Cook on Varoma temperature for 20 minutes, speed 2

  9. Use your spatula to remove basket of rice and tip into a Thermoserver, then add chicken and vegetables and serve.

    I have made this lots of times and love it. My adult kids don't like corriander, so sometimes make it with an alternate marinade.

    Succulent , juicy chicken was delicious. I had marinated in the fridge for over 6 hours. The vegetables, carrots, red onion, celery, snow peas, red capsicum were added 10 minutes into the cooking and taken out with the rice 10 minutes later. Next time I should take rice out after 18 minutes and add the vegetables at this point. Because I used 5 chicken thighs ( 650g) I needed to cook longer so will do this with the vegetables. This dish definitely needs extra sauce so I added a mixture of corn flour and ketjap manis to the water in that last 5 minutes. Thank you stewdoon for this suggestion In the original recipe.

    Delicious!

    I doubled the quantity of sauce and chicken, marinated for several hours and cooked for an extra five minutes...everybody (including the most picky of teenagers) loved it! Super easy and delicious.

    This is absolutely beautiful and so easy its crazy! I serve in a bowl with rice, then chicken & vegies and pour some of the juice over.

     

    I've made the original but this clone just adds the extra flavour it needs!
