Ingredients
Spiced Chicken
- 6-8 chicken breast fillets / chicken pieces
- 1 onion, peeled and quartered
- 3 cloves garlic, peeled
- 8 cm ginger, cut into 2mm discs
- 1 tsp salt flakes
- 1 long green chilli, deseeded if you don't like it hot!
- 1 tsp coriander seeds
- 2 tsp turmeric
- 2 tsp white wine vinegar
- 1 can coconut milk/cream
- 2 tbsp lemon juice

Add onion, cloves, ginger, salt flakes, chilli, coriander seeds, turmeric and vinegar to TM bowl and process for 10 seconds on speed 8 into a paste.
Add coconut milk/cream and lemon juice and blend for 5 seconds on speed 4.
Place chicken in a large bowl and pour over marinade. Let marinate for at least 1 hour in the fridge.
Place chicken in a large baking dish and pour over marinade.
Bake in oven at 180 degrees for 40 - 60mins (depending on the size of chicken pieces). Turn chicken 2 - 3 times during cooking.
Serve with steamed veges of your choice or rice.
Tip
You can double and triple the recipe for a larger crowd.
