Ingredients
- 1 tbsp vegetable oil
- 2 clove garlic
- 1 red chilli
- 1 bunch coriander
- 4 tsp ginger
- 880 grams chicken stock
- 680 grams water
- 2 star anise
- 1 tbsp brown sugar
- 2 tbsp soy sauce
- 2 tbsp fish sauce
- 500 grams chicken
- 4 spring onions
- ground white pepper
- 125 grams vermicelli noodles or angel hair pasta (optional)
- 1 bunch pak choy
- bean sprouts (garnish)

I'm cooking this todayRecipe's preparation
Place cubed chicken, spring onions, coriander, white pepper, 2 tsp ginger and 1 tbsp fish sauce into mixing bowl and press briefly 3 times/1 sec/"Closed lid" /Turbo.
Form into meatballs (golf ball size) and place into varoma
Add garlic, chilli and remaining ginger and chop 3 sec/speed 7.
Add oil and sauté 3 min/100C/speed 1.
Add stock, water, star anise, soy sauce, brown sugar, 1 tbsp of fish sauce & cook 4 mins/ 90C, speed 1.
Add varoma with meatballs and cook 6-8 mins/varoma temp/speed1
When meatballs almost cooked, add noodles (break in 1/2 makes it easier) to TM bowl & pakchoy to varoma. Cook a further 4+mins on "Counter-clockwise operation" / speed 1/100C. Good idea to turn meatballs at this stage
Tip
Cut chicken balls in 1/2 to ensure cooked through

Delicious soup!
I find each time I make this the meatballs are not cooked properly in time required. I've added another 8mins in cooking time tonight to get it right. I think next time I'll make 1/2 golf ball size to see if that helps.

We all loved it,though next time I would make the chicken balls smaller
Great flavour, however my husband complained it was too salty so I will put less chicken stock, more water next time. Thank you!
