Ingredients

Garnish

  • 100 grams dry roasted cahsews
  • 6 heaped tablespoons natural yougurt
  • 200 grams Pineapple chunks

Curry

  • 2 cm pc of ginger
  • 2 cloves garlic
  • 1 brown onion
  • 1 small red chilli, deseeded
  • 1 medium red capsicum, deseeded & cut in quarters
  • 50 grams coconut oil
  • 2 level teaspoons paprika
  • 2 level teaspoons cumin
  • 2 level teaspoons turmeric
  • 200 grams butternut pumkin, cut into 2cm pc's
  • 200 grams eggplant, cut into 2cm pc's
  • 500 grams chicken thighs, cut into 2cm pc's
  • 1.5 tablespoons tamari or soy sauce
  • 1.5 teaspoons fish sauce
  • 400g can coconut cream
  • 200 grams baby peas

Recipe's preparation

    CURRY
  1. 1 - ADD cashews TURBO 1 SEC / TWICE set aside in a separate bowl

    2 - ADD ginger

    CHOP 5 SECS/SPEED 8

    3 - ADD garlic, onion, chilli & capsicum

    CHOP 3 SECS / SPEED 8

    Scrape down sides of the bowl

    4 - ADD oil, paprika, cumin & turmeric

    SAUTE 5 MINS / VAROMA / SPEED 1

    5 - ADD pumpkin, eggplant & chicken

    COOK 5 MINS / VAROMA / REVERSE / SPEED 1(MC OFF & SIMMERING BASKET ON TOP OF LID)

    6 - ADD soy sauce, fish sauce & coconut cream

    COOK 15 MINS / 100C / REVERSE / SPEED 1(MC OFF & SIMMERING BASKET ON TOP OF LID)

    7 - SERVE into thermoserver and ADD peas and let rest for 10 minutes.

    8 - Garnish with reserved cashews, natural yogurt and pineapple chunks. Serve on a bed of jasmine or cauliflower rice.

TIP 1 – spray Thermomix lid with oil before you start cooking to avoid the turmeric staining the lid

    Very nice, I prefer to hand chop the cashews. Loved the pineapple and yoghurt on top. Next time I might add some cornflour to thicken the sauce. Thanks for sharing.
