- 500 grams chicken breast, diced
- 50 grams olive oil
- 1 tablespoon curry powder
- 1 onion, halved
- 1 carrot, quartered
- 1/2 Capsicum, roughly chopped
- 1 tomato, halved
- 300 grams arborio rice
- 330 grams Milk
- 330 grams water
- 1 tablespoon lemon juice
- 1 teaspoon sugar, to taste
- 1 teaspoon soy sauce
- 1 tablespoon veg or chicken stock, optional
- salt, pepper, to taste

1. Place Onion into TMX bowl, chop 3 seconds Speed 7
2. Add Carrot & Capsicum, Chop 5 seconds speed 4
3. Add oil, soy sauce and curry powder and saute for 3 minutes, varoma temp, speed 1 (MC off)
4. Add tomato, chop for 4 seconds, speed 4.
5. Insert Butterfly. Add all remaining ingredients.
6. Cook 20mins, 100 degrees, , speed 1
7. Place in Thermoserver and allow to rest for 5-10minutes. Serve.
Tip
When cooking curry with the butterfly, please note your butterfly may become discoloured. I find using the butterfly prevents shredding of the chicken.

I used coconut cream instead of milk and added 1/2 a zucchini and some mushrooms with the carrot instead of capsicum.

I made this tonight for dinner and wow what a hit even my fussy daughter devoured it thank you for sharing absolutely divine will be added to my repertoire. The only changes I made was used coconut milk, added garlic clove and replaced 100ml of water with 100ml of white wine

A delicious & simple risotto! Plenty of taste, colour and variety. I used chicken thighs and coconut milk but everything else the same. Turned out well, and such an easy dinner, all in one!

Absolutely delicious, added extra tablespoon curry, and fresh chilli, also little white wine with water
Not sure if I did something wrong but I needed to do a lot of tweaking. Needed at least double the amount of stock paste, more cooking time (rice was still a bit crunchy and carrots needed a lot longer) and there was too much in the bowl to cook evenly. I like the concept of this dish but the recipe didn’t work well for me.
The whole family loved it! Will definitely be making this again 😊
This is a regular here. I use coconut milk instead of milk. It is super delish!
