Ingredients

Leberkäse (Bavarian meat loaf)

  • 6 g Mustard seeds
  • 150 g ice cubes
  • 2 Red onions
  • 4 garlic cloves
  • 500 g pork mince, partially frozen
  • 250 g Beef mince, partially frozen
  • 150 g bacon or speck, cubed and partially frozen

spices

  • 10 g salt
  • 1 teaspoons pepper, ground
  • 0.5 teaspoons Nutmeg
  • 1 teaspoons paprika
  • 1/4 teaspoons Ginger, ground
  • 1/4 teaspoons cardamom, ground
  • 6 g ground mustard seed, (from above)

Recipe's preparation

    Pre-prep
  1. Mill mustard seeds at speed 10 till finely ground. Empty into a small bowl for later (don't clean bowl).
  2. Crush ice cubes 5 sec at speed 5, put aside for later (don't clean bowl).
  3. Dough
  4. Add meat, bacon, spices and half the ice, mush for 3-4 minutes at speed 5.
    THE TEMPERATURE OF THE MEAT MIXTURE CAN NOT RISE ABOVE 12-14 C! ADD MORE ICE CUBES IF YOU HAVE TO KEEP MINCING.
  5. Keep mincing until you have a smooth, pale, soft, sticky consistency. After a while you will have to use the spatula to aid the process.
  6. Preheat oven to 180C. Put meat dough into a greased loaf tin. Tap tin onto kitchen bench to remove trapped air. Smooth top and draw diamond pattern on top. Put into oven.
  7. After 10 min, decrease oven temperature to 150C and bake until inside of loaf has reached 70C (approximately another hour).

Tip

Perfect for Octoberfest! Serve with Brezen (baked pretzels) and mustard.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
