Tomato Glazed Meatloaf
- 600 g Beef mince, Topside Lean
- 1 --- carrot, Large (peeled & Grated)
- 1/2 cup --- breadcrumbs, 1/2 Cup
- 1 --- parsnip, Large (peeled & Grated)
- 1 --- egg white, Lightly Beaten
- 3 tbsp tomato sauce
- 1 tbsp Worcestershire sauce
- 1 pinches salt, to taste
- 1 pinches pepper, ground, to taste
- 2 tsp mustard powder, dry
- 1 1/4 cups --- evaporated milk, Light
Glaze
- 1/4 cup --- tomato sauce
- 1/2 tsp mustard powder
- 1 tbsp brown sugar

- Preheat oven to 175°C. Grease a deep loaf tin (23 cm x 13 cm) and line with foil. Spray foil with vegetable oil.
- Chop Vegetables: Add carrot and parsnip to the Thermomix bowl. Chop 5 sec / Speed 5. Scrape down the sides.
- Add Breadcrumbs: Add breadcrumbs and mix 5 sec / Speed 3. Transfer to a large mixing bowl.
- Combine Wet Ingredients: Without cleaning the bowl, add tomato sauce, Worcestershire sauce, salt, pepper, and mustard powder. Mix 10 sec / Speed 3. With blades running at Speed 2, slowly pour in evaporated milk through the lid until combined.
- Mix Meatloaf: Add mince, egg, and reserved vegetables to the Thermomix bowl. Mix 10 sec / Reverse / Speed 3 until just combined.
- Shape and Bake: Transfer the mixture to the prepared loaf tin. Press evenly and turn tin upside down onto the lined baking tray. Bake 15 minutes.
- Glaze Meatloaf: Remove the loaf from the oven, carefully flip it over, and brush with the glaze. Return to the oven and bake for 1 hour 15 minutes.
Continue baking for an additional 1 to 1.5 hours or until the meatloaf is cooked through, and the glaze is caramelized. - Mix Glaze[/b]: Without cleaning the bowl, add glaze ingredients. Mix 5 sec / Speed 4[/b].
- Glaze Meatloaf: Remove the loaf from the oven, carefully flip it over, and brush with the glaze. Return to the oven and bake for 1 hour 15 minutes.
Let the meatloaf cool slightly before slicing. Enjoy hot or cold!
