Ingredients

Mexican Style meat stack

  • 4 lebonese flat bread
  • left over cooked meats, cut into thin sqaures, I used BCB meatloaf
  • 1 red onion, cut in halves
  • 2 large cloves of garlic
  • 1/2 red capsicum, de seeded and cut into large chunks
  • 1/2 large zuchini, cut into large chunks
  • 1 can Chopped Tomatoes
  • 30 grams olive oil
  • 2 heaped tsp cumin seeds
  • 2 tsp paprika
  • 2 tsp ground corriander
  • 1 tsp cinnamon
  • 1 tsp cayne pepper
  • 2 dried bay leaves
  • mozerella cheese, grated

Recipe's preparation

  1. Pre heat oven to 200. grease pizza tray and set aside.
  2. place garlic and onion to bowl. chop 3 sec, sp7. scrape down sides.
  3. Add capsicum peices and zuchinni pieces, chop for 2 sec, sp4. scrape down sides, add oil and spices (exc. bayleaf.) Cook for 4mins, 100deg, Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" .
  4. add in can of chopped tomatoes, leftover cooked meat and bay leaves.
    Place simmering basket on lid in place of mc.
    cook for 15min, 100deg, Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"
  5. once cooked, place on lebonese flat bread on pizza tray, spread out meat stack mix, sprinkle with cheese and top with another piece of flatbread. repeat until you get to the last piece of flat bread. Top with meat stack mix and be generous with the cheese!
  6. Bake until cheese is golden brown. (should be roughly 15-20mins.)
  7. once cooked, top with your favourite sides! I used avocado and mild salsa.

Tip

I got the idea for this "stack" from the Vegetarian Kitchen Cookbook by Thermomix.

I had left over meat loaf from the BCB. The sauce is something I have always made to go over nachos, tacos ect. I usually used lamb or chicken mince when making this but its such a great way to use up left over meats!
