Ingredients

Peanut Butter Chicken Curry - Healthy Mummy adaption

  • 1 brown onion, cut in quarters
  • 2 cloves garlic
  • 2 cm ginger, peeled and cut into slices
  • 1 tbsp olive oil
  • 400-500 grams chicken breast, cubed
  • 2 tsp Ground Coriander
  • 1 tsp cumin
  • 1 tsp tumeric
  • 1 tbsp Vegetable stock paste, or chicken stock paste if you prefer
  • 150 grams water, or less if you prefer a thicker curry sauce
  • 400 grams tin diced tomatoes
  • 120 grams Peanut Butter
  • 270 grams coconut cream, canned, I used light or use greek yoghurt
  • 1 tsp garam masla

Recipe's preparation

    Peanut Butter Chicken Curry
  1. Place onion, garlic and ginger into mixing bowl. Chop 3 sec/speed 7. Scrape down sides of mixing bowl

  2. Add oil, coriander, cumin and tumeric and saute 3 mins/Varoma/speed 1

  3. Add chicken breast and cook 2 mins/Varoma/Counter-clockwise operation"Counter-clockwise operation" /speed Gentle stir setting"Gentle stir setting"

  4. Add stock paste, tinned tomatoes, peanut butter, water, coconut cream and garam masala and cook for 8 mins/100 deg/Counter-clockwise operation"Counter-clockwise operation" /speed Gentle stir setting"Gentle stir setting"

  5. Serve with rice and/or veggies
