Ingredients
Dough
- 65 grams gluten free flour
- 60 grams tapioca flour
- 60 grams Sweet Rice Flour
- 1/2 teaspoon salt
- 1 teaspoon Xanthan Gum/ Guar gum
- 125 grams Boiling hot water
- 2 tablespoons cold water
- 30 grams Rice Bran Oil
Filling
- 500 grams pork mince
- 20 grams ginger
- 2 cloves garlic
- 1 stalk spring onion
- 1/2 carrot
- 1 tablespoon Gluten Free Soy Sauce or Tamari
- 3 drops sesame seed oil
Sauce
- 125 grams gluten free soy sauce
- 1 tablespoon rice wine vinegar
- 1 tablespoon tomato sauce
- 300 grams water
- 2 teaspoon tapioca flour, If you want a thin sauce leave out
Vegetables
- 1 bunch broccolini, Cut in half
- I carrot, Sliced finely
- 24 snowpeas, Storks removed

To the TM add the flours, salt and gum and mix for 3 sec/speed 4.
Add the boiling water and mix 5 sec/speed 6 make sure to put on MC.
Add the cold water and rice bran oil and mix for 5 sec/speed 4-5
Turn out pastry onto silicone mat, roll into sausage shape and divide into 24 pieces. Wrap in plastic wrap till needed.
Take each piece and roll into a circle of about 8 cm, best to fold the silicone mat and roll between. Keep rolled pieces covered in plastic wrap to prevent drying out.
Place the spring onion, carrot ginger and garlic into TM. (making sure they are cut into TM sized lengths) Chop for 4 sec/ speed 7.
Add the pork mince, rice bran and sesame oil and mix for 5 secs/speed 6. Set aside.
Place all sauce ingredients into TM.
Place a heaped tablespoon of meat mixture into your dumpling wrapper and moisten the edge with water.
Gather the dumpling at the top and squeeze to seal. Using both the top and bottom layer fill the Varoma with the dumplings.
Steam the dumplings for 15 mins/Varoma/speed 1.
Add your vegetables of choice to the sauce and steam dumplings for a further 5 mins/Veroma/speed 1.

Grip1960:No definitely goes in dough, did you make sure the water was boiling? Otherwise will be sloppy.
Disappointing rice bran oil should be in filling not dough
very sloppy dough for first time making 😩
