Ingredients
- 200 gram quinoa
- 1 bunch parsley
- 2 tbsp Mint or Corriander
- 3 spring onions
- 1 package cherry tomatos
- 2 tbsp Freshly squeezed lemon, + little extra to squeeze
- 3 tsp paprika
- 1 tsp ground cummin
- Pinch cayenne pepper, to taste
- 100 gram natural yoghut
- 1 tbsp olive oil, + little extra to drizzle
- 600-800 gram Chicken Breast or Tenderloin

Drizzle a little oil, 2 teaspoons paprika and a squeeze of lemon over chicken. Toss to coat then place chicken in varoma dish and tray (if needed).
Place parsley in bowl and chop for 5-10 seconds on speed 6, set aside.
Place corriander or mint and spring onions in bowl and chop for 5 seconds on speed 7. Set aside in salad bowl with halved cherry tomatos and chopped parsley.
Weigh quinoa into basket and rinse with a bowl underneath to catch the grains that wash through. Add 700g water into TM bowl, put basket in place, then add varoma dish on top.
Steam chicken and qunioa for 17-20 minutes/speed 1, until chicken is cooked. Set quinoa aside to cool slightly.
While quinoa cooling, gently mix yoghurt with lemon, oil, cummin and 1 teaspoon paprika. This is the dressing to place on top of salad when assembled.
Mix cooled quinoa with vegetables.
Serve quinoa on plate, topped with chicken and yoghurt dressing.
Tip
You can cook more quinoa and chicken if you want a larger portion.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. This is one of my go-to recipes for a healthy lunch. Sometimes I'm super lazy and just reduce it to the basics, but it's still great.
