Ingredients

Shaghai Sweet Sour Pork Ribs

  • 500 g pork ribs, chopped to fit in bowl
  • 20 g oil
  • 10 g ginger, stem, sliced
  • 50 g white sugar, can use rock sugar
  • 30 g rice wine
  • 50 g chinese vinegar
  • 15 g light soy sauce
  • 15 g dark soy sauce
  • 10 g white sesame seeds, optional

Recipe's preparation

    Preparation
  1. Separate ribs and chop the pork ribs into small pieces (around 3cm long)
    Place into simmering basket and fill jug with cold water until water reaches halfway up pork ribs
    Wash ribs for 5mins / 37'C / Speed 5
    Once ribs are washed, discard water in the jug, rinse ribs under running water to remove froth and rinse the jug

  3. Place oil and ginger into the jug. 3mins/120°C/Speed 1
  4. Add washed pork ribs, white sugar, rice wine, chinese vinegar, light soy sauce, dark soy sauce into the bowl. 25 mins / 120°C / Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting"
  5. Remove ribs from jug into a serving bowl or Thermoserver to keep warm.
    Sprinkle with white sesame seeds onto the pork ribs when ready to serve

Tip

Could use the Varoma mode to steam some veges / fish / meat ball / mantou bun on the top at the same time

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
