Ingredients
bolognaise
- 500-600 g Beef mince (lean)
- 250 g chorizo
- 1 onion, quatered
- 1-2 cloves garlic
- 1 Carrot, small, chopped roughly
- 1 zucchini sliced
- 1 stalk Celery
- few leaves basil
- few leaves Oregano
- few leaves parsley
- 1 piece fresh Bay Leaf
- 80 g Red or white wine
- 80 g water
- 200 g tomato puree
- 150 g tomato paste
- 50 g olive oil
- salt and pepper to taste
Tortilla Stack
- 12 pieces Tortilla wraps
- 100 g marinate feta, crumbled, optional
- 100 g parmesan grated in TM, or any other cheese

Place onion, garlic, carrot, zucchini, celery, basil, oregano and parsley in TM bowl, Chop for 5 sec, Speed 7.
Add chorizo which has had skin removed and is roughly chopped into TM, chop for 5 sec speed 7.
Add oil, mince beef, bay leaf, salt and pepper and cook for 12 minutes, varoma, reverse, speed soft.
Add remaining ingredients of the bolognaise sauce and cook for 22 minutes at 100 deg,reverse, speed soft.
Preheat oven, conventional 200 deg, fan forced 180 deg.
TO ASSEMBLE TORTILLA STACK
Place enough bolognaise sauce at bottom of round casserole dish to cover, then add a tortilla wrap, then more bolognaise to cover tortilla, followed by a sprinkling of marinate feta or grated parmesan or any other cheese , followed by another tortilla wrap, and repeat until all twelve tortilla wraps have been used. Finishing layer must be bolognaise and a sprinkling of cheese. Just a thin layer bolognaise is needed between layers to cover tortilla,this will ensure enough sauce is available for all 12 tortillas It also gives the tortilla stack shape and it looks nice when sliced to serve after being cooked in oven .
Place in preheated oven for 25 to 30 minutes. Slice in triangle serves and serve with a sprinkle of parmesan.
There are endless ingredients you could use to layer the tortilla wraps. A mushroom sauce, alternating with bolognaise sauce would work well. Some crispy bacon pieces would add some texture. Any vegetable would work well in the bolognaise sauce, use whatever vegetable you have, if you dont have carrots or zucchini .
