Ingredients

Teriyaki Marinade

  • 300 g hot water
  • 30 g brown sugar
  • 150 g soy sauce, dark
  • 30 g ginger, stem
  • 6 cloves garlic
  • 1-2 teaspoons chilli flake, dried, (alter to suit tastes)
  • 5 pieces boneless chicken thigh
  • 225 g instant vermicelli noodles, (5 nests)

Garnish

  • 5 sprigs coriander
  • 3 pieces spring onions, thinly sliced
  • 1 pieces red chilli, thinly sliced
  • 1 tablespoons sesame seeds, black

Recipe's preparation

  1. 1. Place coriander in mixing bowl and chop 3 sec/speed 6. Transfer into a bowl and set aside
    2. Place ginger and garlic in mixing bowl and chop 3 sec/speed 6
    3. Scrape sides of bowl down with spatula
    4. Add hot water, brown sugar, soy sauce, chilli flakes to bowl
    5. Mix 10 secs/Counter-clockwise operation"Counter-clockwise operation" /speed 3
    6. Pour into baking dish and allow to cool (approx 10 mins)
    7. Add chicken and leave to marinate for 30 mins
    8. Preheat the oven to 180 degrees and bake chicken in the marinade for approx 20 mins until the chicken is cooked through
    9. Remove from oven and take the chicken out of the dish; leaving the marinade behind
    10. Add the noodle nests, flipping to coat them in the liquid. If the marinade has dried up add an additional 300ml of hot water and mix
    11. Put a piece of chicken on each noodle nest and place back in the oven for an additional 10 mins to allow the noodles to absorb the marinade
    12. Remove from oven and serve. Garnish with the chopped coriander, spring onions, red chilli and black sesame seeds

Tip

Chicken can be marinated overnight or not at all depending on how much time you have
