Ingredients
Every Day Tomato Base
- 1 tbsp olive oil
- 1 onion
- 2 garlic cloves
- 8 Ripe tomatoes (large), or 800 gram tinned tomatoes
- 1 pinch salt
- 1 pinch sugar
Tomato Sauce (Home Made)
- 100 grams apple cider vinegar
- 50 grams water
- 4 tablespoons sugar
- 1 pinch Ground Coriander
- 1 pinch cinnamon
- 1 pinch salt
- 1 pinch hot chilli powder
Lamb Tangine
- 500 gram Gram stewing lamb
- 1 tsp ground cinnamon
- 1 tsp Cumin Powder
- 1 tsp ground ginger
- 1 tsp chilli powder
- 1 cup dried apricots

In "Closed lid" add onion and garlic and chop for 10 seconds/speed 7.
Add oil and sauté "Gentle stir setting" 3 minutes / varoma/ speed 1.
Add the rest of ingredients and cook "Gentle stir setting" 20 minutes/ 100 degrees.
Add all extra ingredients to the "Every Day Tomato Base" sauce.
Cook in "Closed lid" "Gentle stir setting" 25 minutes / 100 degrees.
Blend in "Closed lid" 30 seconds / speed 7.
Pour into sauce bottle and refrigerate.
Add extra ingredients to the "Every Day Tomato Base" sauce.
Cook for 30 minutes/ 80 degrees/ "Gentle stir setting" "Counter-clockwise operation" .
Serve with cous cous.
