Ingredients

  • 100 g parmesan cheese cubed
  • 1 small brown onion, halved
  • 1 garlic clove
  • 2 heaped teaspoons gormet fresh basil paste
  • 1/2 red capsicum chopped, roughly
  • 8 mushrooms, roughly chopped
  • 30 g olive oil
  • 400 g Roma tomatoes, chopped
  • 250 g water
  • 250 g coconut cream
  • 1 tablespoon TM veg stock
  • 300 g fettuccine pasta, broken in half or smaller
  • 100 g chorizo sausage, thinly sliced

Recipe's preparation

  1. Place parmesan into mixing bowl Closed lid"Closed lid"  and chop 3 secs / speed 9.

    Set aside.

    Clean and dry bowl.

  2. Place onion and garlic into mixing bowl Closed lid"Closed lid"  and chop 3 secs / speed 7.  Scrape down sidesof bowl.

  3. Add capsicum and mushrooms and chop Closed lid"Closed lid" 3 sec / speed 5.  Scrape down sides.

  4. Add basil paste and oil and saute Closed lid"Closed lid"  3 minutes / varoma / speed 1

  5. Add tomatoes, water, coconut cream and stock and cook for Closed lid"Closed lid" 10 minutes / 100oC / speed 1

  6. Add fetteccine using spatula to help the pasta stay submerged under the sauce.

  7. Add the chorizo sausage and cook Closed lid"Closed lid" 7 minutes ( or however long it takes to cook the pasta) 100oC / Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"

  8. Pour into thermo server for 5 minutes + and serve with parmesan cheese.

Tip

Any herbs can be added to this dish.  If you were using fresh instead of paste add them with the onion and galic chopping stage of the recipe.

    Used salami instead of chorizo and stirred it through at the end. Amazing! Mr 18 months is a fan too!

    This was absolutely delicious.

    I was worried the coconut cream was going to overpower the dish, but you couldn't taste it.

    Sorry but the coconut cream in this recipe was weird, the flavour was all wrong. I may try again but use cream instead.

    Very nice.  The whole family loved it.  I don't like chorizo so I added chicken and bacon and still very nice.  We liked the different taste with the coconut cream in a pasta dish.

    This was quick and easy. Second meal we made in T5. Next time will try BCB version. Wasn't a huge fan of the coconut cream in this one, it overpowers the over flavours IMHO.  In our house you can never have enough chorizo or cheese so would add more next time. Didn't slice chorizo, after grating parmesan we put in chorizo and did for 7 seconds on speed 6 and then set aside.
