Recipe's preparation

    Paleo German Pancakes
  1. Preheat oven to 200 degrees.  Place coconut oil in 8x8 baking dish -- place on stovetop to liquefy, if it does not liquefy, then put dish in oven till oil is liquid.  In TM bowl, place 4 eggs, blend on Speed 10 for 10 secs. Add all other ingredients and blend again on Speed 10 for 15-20 secs. Pour mixture into baking dish and bake for 15-18 min, until set in the middle.  Serve topped with fresh fruit, and maple syrup and perhaps a dollop of coconut cream.

Tip

I created a sauce with fresh strawberries, by adding coconut oil to a fry pan, slicing up strawberries, heating till warm, then drizzled a small amt of ginger sauce, remove from heat immediately, or maple syrup can be used.  Pancake puffs up in the oven, so can be used as a side accompanyment for brunch, with healthy bacon or a sausage.  Very enjoyable treat.
