Ingredients
Risotto
- 60 g cheese, (choose your type)
- 1 onion, halved
- 4 cloves garlic, peeled
- 1 rasher bacon, roughly chopped
- 200 g pumpkin, roughly chopped
- 3 cauliflower florets, large
- 3 broccoli florets, large
- 60 g leek
- 75 g oil, (olive, coconut or avo work well)
- 250 g arborio rice
- 50 g Butter
- 60 g white wine, (or rice wine vinegar)
- 1 tbsp Veg Stock Paste
- 570 g water

1. Add cheese to bowl and grate 5 seconds on speed 7
2. Set aside
3. Add onion, garlic, bacon, pumpkin, cauliflower, broccoli and leek, then chop for 10 seconds on speed 5
4. Scrape down sides
5. Add oil and Saute for 5 minutes, 120deg on speed 3
6. Scrape the base of the bowl well
7. Add the butterfly whisk
8. Add rice and butter then Saute for 3 minutes, 120deg on REVERSEspeed 2
9. Scrape the base of the bowl well
10. Add white wine and Saute for 3 minutes, 120deg on REVERSE speed 2 with MC off
11. Scrape the base of the bowl well
12. Add veggie stock paste and water then scrap the base of the bowl to make sure water is all the way to the bottom and cook for 20 minutes, 105deg, REVERSE speed 2 with the MC off and steaming basket on
13. Add reserved cheese and mix through for 10 seconds, REVERSE speed 4
14. Place into thermoserver and allow to sit for at least 5 minutes before serving
15. ENJOY

Tip
You can add salt and pepper for more taste and you can remove the butterfly after cooking and blitz on reverse to combine the veggies more if you like!

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Absolutely delicious! After reading the previous comment (it was over cooked), I reduced the last step from 20minutes to just 15minutes. I then placed the risotto in the Thermoserver, and it was perfect!
This risotto is so creamy and delicious! The only thing that I could complain is the risotto overcooked a little too much..
