  • 60 g leek
  • 1 clove garlic
  • 2 cm ginger
  • 85 g olive oil
  • 1 tsp ground cinnamon
  • 1 tsp sweet paprika, ground
  • 0.5 tsp cumin, ground
  • 0.5 tsp Turmeric, ground
  • 1 tsp garam masala
  • 1 tsp coriander, ground
  • 800 g Adzuki Beans, cooked
  • 400 g diced tomatoes, tinned
  • 3 tbsp TMX vege stock concentrate
  • 1 tbsp raw cacao powder
  • 50 g lemon juice
  • 2 tbsp coriander leaves, fresh chopped

Recipe's preparation

  1. Add leek, garlic and ginger to TMX bowl and chop 3 secs / speed 7.

  2. Add olive oil and saute Varoma / 3 mins / speed 1.

  3. Add cinnamon, paprika, cumin, turmeric, garam masala and ground coriander and saute Varoma / 3 mins / speed 1.

  4. Add adzuki beans, tomato, vege stock concentrate and cacao and cook 100 degrees / 15 mins / speed 1.5 Counter-clockwise operation"Counter-clockwise operation"

  5. Add lemon juice and fresh chopped coriander and stir 5 sec / speed 2 Counter-clockwise operation"Counter-clockwise operation"

Serving suggestion:

Serve with steamed rice and green salad

    This is a really good super easy bean curry. I used a mix of tinned beans in it. I found 3 tablespoons of stock paste too salty so to balance out added a dash of cream i had on hand, plus a rinsed tin of lentils. I forgot to add lemon at end but i can see how it would boost the dish so will have to remember next time. There will a next time!

    Very tasty. Easy to make once beans have been cooked. I found that 200 gm of dried beans soaked then cooked in 1500 ml water made about 800 gm cooked beans which was perfect for the recipe. Thank you for the recipe.

    Yum! Didn't have leek so used onion. Also didn't have that many beans so added some carrot and zucchini diced small. Will make again.

    when you say Adzuki beans, cooked... how long do you cook for and do you have a recipe for that? time and how much water etc?

    ABSOLUTELY BEAUTIFUL

    I made this tonight, me and my boyfriend loved it, the taste the texture the flavours were all perfect and this curry is so affordable to make and quick and easy and tastes so healthy.
