Ingredients

Kofta

  • 2 large potatoes, Peeled cubed
  • 1 brown onion, 1/4
  • 2 cloves garlic
  • 6cm fresh ginger, Peeled
  • 1/2 teaspoon nutmeg groun
  • 1 teaspoon turmeric
  • 1/4 teaspoon coriander ground
  • 1/8 teaspoon chilli pwd
  • 1 teaspoon salt
  • 2 cans White beans or cannellini
  • 2 cans crushed tomatoes
  • 120g raw cashews
  • 150g water
  • 30g honey
  • 20g olive oil
  • 1 tablespoon poppy seeds

Recipe's preparation

  1. If using uncooked potatoes then peel & cut potatoes into bite sized pieces. Add 500g water to TM 5 place basket inside add potatoes.Cook 20 min 120° Speed 1. Check they are cooked place in thermoserver to keep hot.

     

    Add cashews and water to bowl blend 20 sec/ speed 6 until smooth and creamy. Set aside in another dish.

    Add brown onion 1/4 pieces to bowl with oil, garlic, ginger and all spices listed. Sauté 3 mins 100°/ Speed 1. Scrape down bowl.

    Add 2 tins tomatoes, cashew paste from before, salt, honey and 2 tins beans  Cook 20 mins/ 100° Speed 2. Counter-clockwise operation"Counter-clockwise operation"

     

    Add in reserved potatoes Cook 5 min/ 100° Speed 1Counter-clockwise operation"Counter-clockwise operation"  

    Check the taste and add more chilli or salt to taste. Add poppy seeds garnish with coriander.

     

     

     

Tip

Can use leftover roast potatoes!

    A good recipe, very tasty spices.. The beans disintegrated during cooking so could add them later for visibility, and texture.. Definitely need to add step to quickly chop ginger, onions etc.

    Nice dish, did chop onion and garlic prior, needed extra chilli and salt at end as suggested in recipe,

    This was very yummy. I wasn't sure if there was a step missing. Such as chopping the onion and the ginger before saute. Mine was still in large chunks so after sauteing when I looked in I decided to give it 5 seconds of chopping before proceeding with the rest of the instructions. I also decided to add a dollop of Thermomix Cashew Sour Cream and we served with Thermomix Bread.

    We really enjoyed the taste of this - it was a bit spicier than we had expected from the ingredients which was good and had a nice depth of flavour, possibly because of the cashews. A bit fiddly to make. It went well with steak. Thank you for the recipe.
