Ingredients

  • 15 g rice bran oil or light olive oil
  • 1 --- garlic clove
  • 1/2 tsp vegetable stock concentrate, Optional
  • 1 tsp water, Optional
  • 1 sprig Leaves only Basil or Thai Basil, Optional
  • 200 g broccoli, (about a small head broken into florets)
  • 1 small red chilli, Deseed if you don't like it hot
  • 70 g Green beans, trimmed, Cut into halves
  • 60 g zucchini, About half a zucchini, cut in half lengthways then sliced
  • 1 tsp soy sauce

Recipe's preparation

  1. 1. Add oil to TM bowl, cook 1 min 100 deg speed 1.

     

    2. add garlic clove, chilili, basil or Thai basil if you are using. Chop Sp7 for 3-4 seconds. Scrape down. Cook 1 minute 100 degrees Sp .

     

    3. Optional: Add 1/2 tsp of Vegetable Stock Concentrate (VSC) and 1 tsp of water. Blend Sp 5 for 4 seconds.

     

    4. Add Broccoli, Beans and Zucchini. Cook for 2 minutes, Varoma Temp,, Speed 2.

     

    5. Add soy sauce. Be careful so it doesn't turn out too salty if you have used VSC earlier).  Cook 1 minute, Varoma Ttemp, [Counter-clockwise operation"Counter-clockwise operation" Speed 2. Serve and enjoy

     

Tip

Serves 1 as a main or 2 as a side

 

Mix through some  cooked noodles (delicious with Soba noodles)

 

Use a side dish with grilled meats or fish

 

Handy when you're in a rush and want to eat something healthy.

    Really easy, and yummy. Used tamari instead of soy and may add 2 teaspoons for more flavour. Cooked for 7mins in total as i like my vegetables soft.

    This recipe is absolutely AMAZING!!! I didn't have enough broccoli, so I  added another 60g of sliced carrots & increased the cooking time to 3 minutes without the soy sauce & 2 minutes with the soy. Still beautifully crunchy, but more to my taste.

    Thanks for posting such a great recipe!

    Hi. I'm glad the end result was a popular one... yes, That's usually how long I cook it for as I do like them Crunchies and mine tend to disintegrate if cooked longer. You must have super fresh vegies! I want some !!

    Am I reading right that the total cooking time of the vegetables is 3 minutes? I don't mind crunchy veg but my broccoli was cold. I cooked for another few mintes on Varoma/reverse and it was delicious. The kids not only ate but enjoyed green vegetables - a rarity in our house.

    Thanks, great recipe and I have been pleased with the results tonight. I have done as you suggested and combined some asian style noodles through it too as I have a hard working shearer who needs his carbs! I also added a dash of mirin with the soy. Great late summer recipe with so mnay of these ingredients abundant in the garden right now. Cheers
