Ingredients

  • 1 onion, halved
  • 4 garlic cloves
  • 1/2 tablespoon ground cumin
  • 1 teaspoon curry powder
  • 3 tablespoon canola oil
  • 500 g water
  • 2 tablespoon Vegetable stock paste
  • 1 can coconut milk, (roughly 270mL per can)
  • 500 grams tinned peeled tomatoes
  • 0.5 sweet potato, peeled and diced ~3cm cubes
  • 2 small-medium white potatoes, peeled and diced ~3cm cubes
  • 100 grams cabbage, shredded
  • 100 grams Shredded coconut
  • juice of half a lime
  • frozen peas, 1 cup
  • Salt and pepper, to taste

Recipe's preparation

  1. 1) Add onion, garlic, pepper flakes, cummin and curry powder and chop 3 sec speed 7.

    2) Add oil, saute, 3min/100C/speed 1.

    3) Add Water and vegetable stock, coconut milk and tinned tomatos.

    4) Add potatoes, cabbage, peas and shredded coconut in rice basket, and then place in TM bowl. Cook 17min/VAROMA/speed 1.5.

    5) Check to see that potatoes are cooked. Cook another 2min/100C/Speed 1, if needed.

    6)Place in a thermoserver. Serve warm on top of rice or as a soup.

    7) Squeeze a little bit of lime juice on top! Enjoy!

    tmixmic: Hi I found the same when I cooked it but after the 17 minutes I tipped the whole lot into the bowl and cooked for a further 10 minutes.

    I enjoyed this recipe but feel that the instructions need to be rearranged or re worded, such as placing potatoes, cabbage, peas and coconut in rice basket. I think it should read: Place in rice basket potato, sweet potato, cabbage, peas and coconut.
    I also found that using all the ingredients specified it didn't fit in the basket and the liquid overflowed slightly. After the first 17minutes I took the basket out and placed the ingredients in the bowl and cooked for a further 10 minutes cutting the potatoes in 2 cm cubes as I found 3cm to be to big.

    Great recipe, i did find it was tight fit in the basket with all the veggies so next time i might put a few in the bowl tmrc_emoticons.)

    i had cabbage and sweet potato to use up so left out the white potato.  There was too much veg for the basket so added it to the bowl with the expectation that it would act as a thickening agent, which it did.  I like my veges a bit softer so cooked for an extra 10 mins.  i will definitely make again but would add a bit more spice quantity and leave out the shredded coconut.  Thanks!

    Thanks for your feedback! I am glad you found it yummy, I do use more or less the amount I have stated in the recipe with each time I make this, as I've mentioned in a previous comment the size of veggie does matter (I should mention that really) but the beauty of this recipe is that you can play around with it when it comes to the veggies. I hope you give it a go again tmrc_emoticons.) it really is yum.

    So Sorry for the late reply. I guess it just depends on the size of potatoes etc... I generally get a feel of what is going to fit in my rice basket as I go, as each time I make this, I used different produce (ie. potatoes and carrots) each time. The shredded coconut I added last as it can fit in through all the gaps of the bigger pieces. I am sorry you were disappointed with it!

    You can't fit all the veges in - only enough for 1 person - so other options are necessary.... but very yummy!
