Creamy Coconut JackFruit Curry with Broccoli Rice

  • 700 grams broccoli, cut into florets
  • 15 grams fresh ginger
  • 5 grams garlic
  • 1 green chilli
  • 200 grams brown onion, cut into wedges
  • 20 grams olive oil
  • 90 grams Tandoori Paste
  • 30 grams tomato paste
  • 100 grams water
  • 20 grams almond meal
  • 2 cans jackfruit, cut jackfruit into 3 cm pieces
  • 1 teaspoons salt
  • 90 grams coconut cream
  • 6 sprigs coriander, for garnishing

Recipe's preparation

  1. Place 350 g of the broccoli into mixing bowl and chop 5 sec/reverse/speed 5. Transfer into Varoma dish and set aside. Place remaining 350 g broccoli into mixing bowl and chop 5 sec/reverse/speed 5. Transfer into Varoma dish and set aside. Clean and dry mixing bowl. Place ginger, garlic and chillies (optional) into mixing bowl and chop 3 sec/speed 7. Do not scrape sides of mixing bowl. Add onion and oil, then start High Temp. . Add tandoori paste, tomato paste, water, almond meal, jackfruit and salt. Place Varoma, with cauliflower rice, into position, secure Varoma lid and steam 8 min/Varoma/reverse/speed 1. Stir broccoli with aid of spatula to ensure even cooking, then secure Varoma lid and steam for a further 4-6 min/Varoma/reverse/speed 1, until cooked to your liking. Remove Varoma and transfer broccoli rice into a thermal serving bowl or other large bowl and cover to keep warm. Add coconut cream into mixing bowl and cook 2 min/90°C/reverse/speed 1. Divide curry and broccoli rice between serving bowls and garnish with fresh coriander leaves and chopped green chilli (optional) before serving.
